Alia’s hands-on experience in food research with PepsiCo International

Alia Alwedyan, a third-year PhD student investigating the molecular structuring of foods to feed the gut microbiome in Dr Fred Warren’s group at the Quadram Institute Bioscience (QIB), recently completed her CASE (collaborative awards in science and engineering) placement with PepsiCo International.

‘’My research focuses on understanding the effects of novel processing methods on dietary fibre-water interactions at the molecular level, and how these affect accessibility to the gut microbiota. During my placement at PepsiCo, I had a unique opportunity to gain practical experience that directly complemented my academic work, including the chance to prepare my own samples, and learn about all the steps involved in my samples’ production.

I also really enjoyed working with the Flavour Science and Technology team, gaining valuable insight into the impact of seasoning on umami flavour and contributing to the development of product profiles. The placement gave me invaluable exposure to food research beyond the lab, and the collaborative atmosphere within PepsiCo allowed me to apply my academic knowledge to different challenges, and I learned a lot about the practicalities of product development.’’

Alia found the placement both professionally and personally rewarding. “It was fascinating to see how food products are developed in industry. I’ve gained a broader perspective on how food science translates into practice, and I feel more confident in the relevance and application of my research,” she reflects. The professional connections she made during her placement will be invaluable as she moves forward in her career. The experience also helped her feel better equipped to bridge the gap between academia and industry, and her placement experience has made her more confident in pursuing career options beyond academia.

Through these initiatives, we were a collaborative partner for Alia’s BBSRC funded NRPDTP PhD programme and hosted her for a placement. It was a pleasure to host Alia at the PepsiCo R&D centre in Leicester. During her stay, she generated samples and data that directly contributed to her PhD research and supported my team in exploring new flavour technologies for snacks development. She advanced the project by providing scientific insights and learning how to apply science to create a competitive business advantage.”

For other PhD students about to embark on their CASE placements, Alia advises, “Approach your placement with an open mind and be ready to learn from both academic and industry experts. The connections you make during your placement can shape your career, so don’t hesitate to network and ask questions. Also, don’t be afraid to step outside your comfort zone, especially when working in a new and unfamiliar environment- it’s a great opportunity for growth.” Alia’s placement with PepsiCo was an invaluable learning experience, blending theoretical knowledge with real-world food science and industry practices.
